This course walks your team through cut ID, grading, and placing, so they show up ready instead of guessing. With short, focused videos on every cut and every grade, your team can build real confidence long before they ever step up to a real contest.
Use it in class as a group, or let students work through it on their own before contest season. Pause and replay any cut or grade as many times as it takes. It is like having a coach on call without the scheduling. This course covers:
- Beef Retail Cut ID, from porterhouse and T-bone to round, chuck, and sirloin cuts
- Pork and Lamb Retail Cut ID across every major portion
- Quality and Yield Grading, including estimating ribeye area and backfat
- Classroom Prep for placing classes, question classes, and keep/cull sets
- Training Tips for teaching ID, using local resources, and avoiding common mistakes
